Only a few more weeks of summer left, but still plenty of time to enjoy your favorite outdoor activities. And if camping is one of those activities, we’ve got some fun, unique recipe ideas for you. It’s not just hot dogs and s’mores anymore — see what else you can cook over the fire!

“Cat Tails”

•1 package croissant dough
•Butter
•Cinnamon & Sugar Mixture

Cook the croissants over the fire. When they’re done to your liking, smother them in butter then sprinkle the cinnamon and sugar all over them.

 

“Slop”

•1 to 2 large potatoes cut up
•butter
•sausage
•3 to 4 eggs
•salt
•pepper
•shredded cheese
•1 disposable metal pan

Clean and cut up potatoes and place in foil (fold foil like a pocket), add butter and place on a rack above camp fire. Let cook until potatoes are soft. Once potatoes are soft place them in your disposable metal pan. Add uncooked sausage, eggs, salt, and pepper. Place back on rack and stir until eggs and sausage are done. Sprinkle with shredded cheese.

 

Campfire Eclairs

Campfire Eclairs

•1 8-ounce can Pillsbury crescent dinner rolls
•2 vanilla JELL-O Brand pudding snacks
•1 tub Betty Crocker whipped frosting (chocolate)
•thin-tip cooking sticks
•aluminum foil
•Pam cooking spray

Cover tip of stick with aluminum foil and spray with Pam. Stretch one crescent roll over foil and squeeze tip to close and tighten. Cook over campfire until golden brown turning frequently. (Crescent roll is done when it slides off the foil easily.) Fill center of crescent roll with vanilla pudding, spread chocolate frosting on top, and enjoy! (serves 8)

 

Deep Dish Nachos

•1 bag Tostitos Nacho Chips
•shredded cheddar cheese (desired amount)
•shredded Tex-Mex cheese (desired amount)
•Jalapeno peppers, to taste
•1 tomato, diced
•sour cream
•salsa

Place a layer of nachos in a frying pan. Layer cheeses, salsa, sour cream, jalapeno peppers and tomato on top of nachos. Put more nacho chips on top and repeat. Heat over fire until cheese is melted and gooey. You can always add ground beef to it as well. (serves 4-6)

 

Pocket Pizza Pies

•2 pieces of white bread,
•pizza sauce,
•pepperoni,
•mozzarella cheese,
•butter or olive oil

Use a cast iron “pocket pie” maker (you can buy them at camping stores – it’s essentially a pie maker on a stick). Grease the inside with butter or olive oil. Put a slice of bread on each side of the pie maker (some will hang over the edge). Put some pepperoni, cheese and sauce in the center of one slice. Carefully close the pie maker and cut off the edges of the bread outside of the pie maker. Put the pie maker in the hot coals of the campfire. Check every minute to see if it’s done – the pie will be sealed and the outside will be toasted. Stick a knife in to see if it’s hot all the way through. Carefully remove the pocket pie from the pie maker and enjoy. (serves 1-2)
